Don’t know about you, but cooking on the weekends help chill me out. It was my first time making dumplings/potstickers. These were filled with a chicken and shrimp mixture, fried to crispy perfection, then drizzled with a red chili garlic oil. My pleating skills need more practice—definitely a few ugly duds in the mix—but oh well, guess that’s what I get for downing a huge cup of coffee and having jittery hands while pleating dumpling skins. 😅 Hopefully no one notices if they’re hungry and quickly shoving these into their mouths. 😋🥟 . . #dumplings #potstickers #chickenandshrimpdumplings #winnerwinnerchickendinner #homemade #chinesefood #lunch #dinner #cooking

Donning my patriotic red white and blues today, naturally. Go vote because democracy is beautiful and “Freedom is not free.” . Democracy is a lot like ordering pizza. Everyone gets to pick their toppings. Everyone gets a slice of the pie. If you don’t like it, order a new pizza. Some toppings make a great combo together, while others are just strange. There are toppings out there for everyone: classic cheese and pepperoni, meat lovers, or even gluten-free vegan (shoutout to the my hippie Californian peeps). Then there are the game changers: Hello, #pizzookie . At times, pizza is controversial: how to eat it, how thick the crust should be, sauce or no sauce. But make no mistake—we should not EVER let the school lunch bully take it away from us because they are threatened by their own insecurities and lack of self-esteem. We must always protect our right to choose our toppings and continue building the best pizza in town together. . Grab a plate, take a slice, and have a seat at the table. Quinta da Regaleira is a UNESCO World Heritage Site inside Sintra, Portugal. The estate was owned by a wealthy Portuguese businessman Antonio Augusto Carvalho Monteiro, who was also a well-known Freemason. He ordered construction the four-hectare property with enigmatic buildings, mysterious parks, and secret underground tunnels. . All of the structures erected in Quinta da Regaleira are filled with many symbols, which are linked to masonry, alchemy, the Rosicrucian and Hermetic legacy, the Knights Templar and Tarot mysticism. . One of the more intriguing sites are the Initiation Well. It was never used to carry water, but was actually built for secret ceremonial purposes. The Initiation Well has a spiral staircase descending 88 feet to the bottom of the well through its nine landings. It is believed that the spacing of these landings, as well as the number of steps in between, are linked to Tarot mysticism and Masonic principles. At the bottom of the Initiation Well is a compass over a Knights Templar cross, which is said to have been the coat of arms of Carvalho Monteiro, pointing to his association with Rosicrucianism. . Most necessary pilgrimage. . It’s been a very hot summer day in Lisbon, but that hasn’t stopped me from visiting the famous Pastéis de Belém for their pastel de nata, made by hand via closely guarded recipe, since 1837. I enjoyed these lovelies under a shady tree on a park bench at Jardim de Belém, a large public park a few blocks down. . Best treat of the day—even if I did get powdered sugar stuck on the corners of mouth as I was ungracefully shoving them in. The Stockholm subway system is said to be the world's longest art exhibit at 110 kilometers long. Since the 1950s, over 90 of the 100 subway stations in Stockholm have been decorated with sculptures, mosaics, paintings, installations, engravings, and reliefs by over 150 artists. . T-Centralen, the central station of Stockholm’s subway, was the first station to feature artwork. One of my favorite highlights for lunch today: dining at a biodynamic, self-sustainable garden cafe inside a greenhouse. The cafe is called Rosendals Trädgård, located in the Djurgården island of Stockholm. The Rosendals Garden grows, cultivates, cooks, and teaches sustainable farming practices, underlining some of the important food concepts of Sweden. Finishing up work early and took the opportunity to soak in the kiss of warm sunshine and seabreeze along this beachside town just a train ride away. . It’s been very rainy the past few weeks in Lisbon. Apparently it’s very rare for this region. ( #climatechange 😕). The rain would come down quite suddenly as a heavy downpour for several minutes, without warning or gentle sprinkle. Then, just like that, it goes away as quickly as it came. The rain pattern has definitely caught people off guard as they walk out and about, but we’ve learned to always have our umbrellas with us—just in case. . Colors and textures of Lisbon are so layered with past, present and future. Vast portions of the old streets in Lisbon are lined with these black and white patterned pavement. Older buildings in the Baixa neighborhood are lined with intricate patterned tiles.
